以前は本格的なのに手軽に作れる夏の定番サルサをご紹介しましたがシリーズ第二弾は秋の定番、しかも日本でよく採れるみんな大好きな🍠さつまいも🍠を使ったお手軽レシピです🎶しかも、アイルランドの秋の味らしいですよ😆

I hope everyone is enjoying the cool weather now that autumn has come.
A lot of students tell me that they like this season because of the food.
Sweet potatoes are one of the most popular food items we can get in Japan at this time of year.
How do you like to eat sweet potatoes? Have you ever heard of a dish from Ireland called “Colcannon”? It’s usually made with mashed potatoes and cabbage, but it’s also very tasty if you use sweet potatoes. Here’s how I make it:
Ingredients:
2-4 whole sweet potatoes (about 1 kg or a little more, depending on how much you want to make)
¼ to ½ of a whole cabbage , roughly chopped (about 3 cups)
1 leek, finely chopped
1 bunch of green onions, finely chopped
4-5 tablespoons butter, or more if you love butter
1 cup (total) milk and/or fresh cream
2-3 slices bacon, roughly chopped (optional)
Salt and black pepper to taste
Roast or boil the whole sweet potatoes until they’re soft enough that a fork easily penetrates to the center.
Let the sweet potatoes cool, then split them in half and scoop out the inner part and discard the skins (or you can eat them if you like sweet potato skin!) If you get some small bits of skin in the potato flesh, that’s probably alright.
Mash the sweet potato flesh in a large bowl just like regular mashed potatoes.
Melt the butter in a large pot and saute the leek 2-3 minutes then add the cabbage and cook until it’s slightly softened. (if using bacon, saute it before the vegetables so it gets a bit browned).
Add the green onions and cook another 1-2 minutes, then add the mashed sweet potatoes and milk/cream. Mix everything well while heating to serving temperature.
Season with salt and pepper to taste. If it seems a little dry, you can add some more milk or cream.
Serve by itself or with chicken, pork, or anything you usually eat mashed potatoes with.
