秋と言えば食べ物がおいしい季節ですよね👀
大人気講師のChrisが食欲の秋にちなんで
趣味でもあるお菓子作りのレシピをシェアしてくれました。

Ooh, I got big fat chestnuts from Ibaraki! A real treat! Chestnut rice is a solid classic, but I love that my mind’s drifting to dessert—let’s indulge in the autumnal vibe and happily getting fat! 😄 I’m thinking of something sweet to make with those chestnuts. Here’s a quick dive into a decadent chestnut dessert idea, plus some thoughts to spark your creativity.

Chestnut Dessert Idea: Chestnut Cake
This chestnut cake is a dreamy, creamy dessert that screams autumn with its rich chestnut flavor. It’s basically a mountain of chestnut puree piled on a sweet base. Here’s a simple version to try with Ibaraki chestnuts:
Quick Chestnut Cake Recipe
Ingredients (for ~4 servings):

Prep the Chestnuts: If using fresh chestnuts, score an “X” on the flat side, boil for 20 minutes, then peel off the shell and inner skin. (Pro tip: Ibaraki chestnuts are often sweet, so taste one to gauge sugar needs!)

Put 4 egg whites in a bowl
Add 75g white sugar mix with a hand mixer until fluffy and foamy

In another bowl, add 4 egg yolks
Add 75g white sugar mix with a hand mixer until creamy
then Add 100ml vegetable oil
Add 100ml milk
mix with hand mixer until blended

Add 200-250g of cooked and peeled chestnuts into a food processor and process until breadcrumb consistency
Add Chestnut crumbs to the bowl of egg yolks
Add 100g of all-purpose flour
Add 2 teaspoons of baking powder and mix with hand mixer until incorporated.

Add a spoon of the egg white mix to the egg yolk, chestnut mix and stir in with a spatula
continue this process until all the egg white foam mix is incorporated.

Prepare a 20-24cm cake pan, with a circle of baking paper on the bottom. Spoon in the mixture
and bake in the oven on the middle shelf at 180/C for 40 minutes.
Remove from oven and let cool.
Dust with powdered sugar or sprinkle crushed chestnuts for crunch. Serve immediately and revel in the autumn decadence!
